This a cheap alternative to having ham or other deli meats on your sandwiches or rolls. It is simple and easy and requires hardly any ingredients
You will need a carton of eggs (I always use free range and cost around $4), keens curry powder and some mayonaise
- Boil some water in a saucepan, when boiled place in the eggs and boil for 10 mins
- then rinse under cold water until cool, then peel the shell and place in fridge for around half an hour
- place eggs in a big bowl and with a folk, mash the crap out of it while adding about 2-3 heaped tablesppons of mayonaise and 1 teaspoon of the curry powder until it resembles curries eggs
- place in airtight container in fridge and use when required
